Three Easy Weeknight Chicken Recipes

Weeknight Herb Roasted Chicken

Ingredients:

  • 1 ½ tablespoons of Maldon salt
  • ½ tablespoons of black pepper (I used coarse ground for this recipe)
  • 3 organic garlic cloves
  • 1 shallot (chopped)
  • 3 tablespoons of extra virgin olive oil
  • 3 tablespoons of organic butter
  • 1  fresh organic chicken
  • Fresh herbs (I used two sprigs of thyme, rosemary and parsley)

Directions:

  1. Preheat your oven to 400 degrees.
  2. Remove your chicken from the packaging, and wash it off with lemon/lime juice. 
  3. Place the chicken on a cutting board and process it using the Spatchcock method
  4. Coat chicken (front and back) with olive oil.
  5. Sprinkle chicken with salt and pepper. Be sure to get some of the salt under the skin of the chicken. 
  6. Heat an oven-safe pan or pot that is large enough for your chicken. You want to sear the chicken, so the heat needs to be high. 
  7. Place the chicken in the pan/pot. Sear the chicken for seven to ten minutes. 
  8. Turn the chicken over so that the chicken is now skin side up.
  9. Add butter, shallots, garlic, and herbs to the pan/pot. 
  10. Add a sprinkle of Maldon salt to the top of the chicken. Place the chicken in the oven. 
  11. Baste the chicken after 45 minutes. Turn the oven off after 1 hour and 15 minutes. Allow the chicken to cool and settle.

Brown Sugar Jerk Chicken Wings

Ingredients:

  • 1 ½ pounds of organic chicken wings
  • 1 teaspoon Walker’s Wood Mild jerk paste
  • 1 teaspoon Adobo seasoning without pepper
  • 1 teaspoon Cajun seasoning
  • ¼ white onion sliced
  • 1 ½ tablespoons of dark brown sugar
  • 2 tablespoons extra virgin olive oil, plus extra for your pan

Directions:

Preheat your oven to 375 degrees.

  1. Place your washed wings in a bowl, and add the olive oil.
  2. Add the jerk paste, adobo seasoning, and cajun seasoning. Coat the wings with seasoning mixture.
  3. In an oven safe pan/pot add olive oil to the bottom of the pan.
  4. Next, cover the bottom of the pan/pot with the brown sugar.
  5. Place onion slices on top of the sugar.
  6. Put wings on top of the onion slices.
  7. Place the pan/pot into the oven and let the wings cook for about an hour. You can let them cook longer if you like your wings well-done.

Super Duper BBQ Chicken Sliders

You will need a slow cooker for this one!

Ingredients:

  • 1 ½ pounds organic chicken breasts
  • 2 tablespoons of Tony Chachere’s creole seasoning
  • ½ teaspoon of black pepper
  • 1 tablespoon of extra virgin olive oil
  • 8 ounces of chicken broth
  • 18 ounces of your favorite BBQ sauce
  • 1 package of Hawaiian sweet rolls
  • organic butter or ghee for your buns

Directions:

  1. Wash your chicken breasts.
  2. Place the chicken breasts in a bowl. Coat them with olive oil.
  3. Add in the creole seasoning, and black pepper. Mix well.
  4. Sear the breasts in a hot pan, so that both sides are golden brown.
  5. Place them in the slow cooker. Add chicken broth.
  6. Turn your slow cooker on (if you are starting this in the morning for an evening dinner, you can put it on the low setting. If you need it done faster, either put your slow cooker on high, or simmer the chicken breasts, seasoning and broth on a medium high seasoning until cooked through.
  7. Once your breasts are cooked all the way through, take them out of the slow cooker, and pour off the liquid. Next, place the chicken back into the slow cooker/pot. Add BBQ sauce to your taste. My family likes it super saucy, yours might not. Use a fork to pull the chicken apart. The chunk/shred level is up to you. I like mine finely shredded.
  8. Toast your buns, and add butter or ghee. My method is putting the oven on broil, cutting the buns in half as one huge sheet, then adding ghee and broiling for two minutes.
